Place the poha (flattened rice) in a colander and rinse gently under running water. Let it drain completely and set aside.

Heat the vegetable oil in a large pan over medium heat. Add the mustard seeds and let them splutter.

Add the curry leaves and chopped green chili. Sauté for 30 seconds until fragrant.

Add the finely chopped onion and sauté for 2-3 minutes until translucent.

Add the grated carrot and cook for another 2 minutes, stirring occasionally.

Sprinkle in the turmeric powder and salt. Mix well.

Add the drained poha to the pan. Gently mix everything together, ensuring the poha is evenly coated with the spices and vegetables.
