Preheat your oven to 180°C (350°F).
Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-12 minutes until tender, then drain and set aside.
While the potatoes are cooking, finely chop the onion.
Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
Add the boiled potatoes to the pan with the onions. Season with salt and black pepper. Stir well to combine.
Sprinkle the flour over the potato mixture and stir to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
Lightly grease a baking dish with a little olive oil. Layer 4 slices of bread on the bottom of the dish.
Spread half of the potato and onion mixture over the bread layer.
Place 2 slices of cheese over the potato mixture.
Add another layer of the remaining 4 bread slices.
Spread the rest of the potato and onion mixture on top.
Finish with the remaining 2 slices of cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
Remove from the oven, let it cool for a few minutes, then slice and serve warm.
