Heat a heavy-bottomed pan on medium heat and add 1 cup semolina (sooji/rava). Dry roast the semolina, stirring continuously, until it turns light golden and aromatic (about 4-5 minutes). Transfer to a plate and set aside.

In the same pan, add 2 tablespoons ghee. Once hot, add 1 teaspoon mustard seeds and let them splutter.

Add 1 teaspoon urad dal and 1 teaspoon chana dal. Sauté for 1-2 minutes until the dals turn golden brown.

Add 10 curry leaves, 2 chopped green chilies, and 1 medium onion (finely chopped). Sauté until the onion turns translucent.
