Heat a heavy-bottomed pan on medium heat and add 1 cup semolina (sooji/rava). Dry roast the semolina, stirring continuously, until it turns light golden and aromatic (about 4-5 minutes). Transfer to a plate and set aside.
In the same pan, add 2 tablespoons ghee. Once hot, add 1 teaspoon mustard seeds and let them splutter.
Add 1 teaspoon urad dal and 1 teaspoon chana dal. Sauté for 1-2 minutes until the dals turn golden brown.
Add 10 curry leaves, 2 chopped green chilies, and 1 medium onion (finely chopped). Sauté until the onion turns translucent.
Add 1 medium carrot (diced) and
5 cup green peas. Sauté for 2-3 minutes until the vegetables are slightly tender.
Add
25 cup roasted peanuts and mix well.
Pour in
5 cups water and add 1 teaspoon salt. Stir and bring the mixture to a boil.
Reduce the heat to low. Gradually add the roasted semolina, stirring continuously to avoid lumps.
Continue stirring and cook until the mixture thickens and the semolina absorbs all the water (about 3-4 minutes).
Turn off the heat. Add 2 tablespoons chopped coriander leaves and 1 tablespoon lemon juice. Mix well.
Cover and let the upma rest for 2 minutes. Fluff with a fork and serve hot.
