Rinse the basmati rice thoroughly under cold water until the water runs clear. In a saucepan, add 200g rice and 400ml water. Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes until the rice is cooked and fluffy. Set aside.

Soak 120g soya chunks in hot water for 10 minutes. Drain, rinse with cold water, and squeeze out excess water. Set aside.

Slice the 2 medium onions thinly. Finely chop 3 cloves garlic and 2 green chilies.

Heat 1 tbsp (15g) vegetable oil in a large pan or wok over medium-high heat.

Add the chopped garlic and green chilies. Sauté for 1 minute until fragrant.

Add the sliced onions and sauté for 3-4 minutes until they turn soft and slightly golden.

Stir in 1 tbsp (15g) ginger garlic paste and cook for another minute.

Add the soaked soya chunks to the pan. Stir fry for 3-4 minutes until they start to brown slightly.

Add 2 tbsp (30g) ketchup, 1 tbsp (15g) mayonnaise, 1 tsp (2g) chili powder, and salt to taste. Mix well to coat the soya chunks and onions evenly. Cook for another 2-3 minutes.
