1Wash and cut the cauliflower into small florets and peel and dice the potatoes into 1-inch cubes.
Finely chop the onion, tomato, green chili, and cilantro.
Heat 2 tablespoons (30ml) of vegetable oil in a large pan over medium heat.
Add cumin seeds and let them splutter for a few seconds.
Add the chopped onions and sauté until golden brown.
Stir in the ginger-garlic paste and green chili, and cook for 1 minute until fragrant.
Add the chopped tomato and cook until it softens and the oil starts to separate.
Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
Add the diced potatoes and cauliflower florets. Mix to coat the vegetables with the masala.
Cover and cook on low-medium heat for 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender.
Sprinkle garam masala and chopped cilantro over the cooked vegetables. Mix gently.
Serve hot with roti, naan, or steamed rice.
