Slice the pork tenderloin into thin strips.
In a bowl, mix the pork strips with 2 tablespoons of soy sauce. Let it marinate for at least 15 minutes.
While the pork is marinating, slice the red and green bell peppers into thin strips and chop the onion.
Mince the garlic and ginger.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Add the marinated pork to the pan and stir-fry until it is browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.
In the same pan, add the onion, garlic, and ginger. Stir-fry for about 2 minutes until fragrant.
Add the sliced bell peppers to the pan and stir-fry for another 3-4 minutes until they are tender-crisp.
Return the pork to the pan and add 1 tablespoon of oyster sauce. Stir everything together and cook for another 1-2 minutes to heat through.
Serve the stir-fry hot, optionally with steamed rice or noodles.
