Boil the potatoes, cauliflower, and green peas until they are soft. Drain and set aside.

In a large pan, heat 1 tablespoon of butter over medium heat. Add the chopped onions and sauté until they are translucent.

Add the chopped bell peppers and tomatoes to the pan. Cook until the tomatoes are soft.
