1Slice the chicken breast into thin strips.
Heat the canola oil in a large skillet or wok over medium-high heat.
Add the chicken strips to the skillet and stir-fry for 4-5 minutes, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add the broccoli florets, sliced carrots, and bell pepper strips. Stir-fry for 3-4 minutes until the vegetables are just tender but still crisp.
Add the grated ginger and minced garlic to the vegetables and stir-fry for 1 minute until fragrant.
Return the cooked chicken to the skillet with the vegetables.
Pour the low-sodium soy sauce over the chicken and vegetables. Stir well to combine and cook for another 1-2 minutes until everything is heated through.
Serve the Chicken and Vegetable Stir-Fry hot, garnished with additional fresh herbs if desired.
