Rinse the split green gram (moong dal) thoroughly and soak it in water for 3-4 hours.
Drain the water and grind the soaked moong dal into a smooth batter using a little water if necessary.
Transfer the batter to a mixing bowl and add yogurt, ginger-green chili paste, and salt. Mix well.
Just before steaming, add fruit salt (Eno) to the batter and mix gently until it becomes frothy.
Grease a steaming tray or plate with a little oil and pour the batter into it.
Steam the batter in a steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
In a small pan, heat oil and add mustard seeds. Once they crackle, add sesame seeds, asafoetida, and curry leaves. Sauté for a few seconds.
Pour the tempering over the steamed dhokla.
Allow the dhokla to cool slightly, then cut into pieces and serve.
