In a mixing bowl, combine 200g of gram flour, 1/2 tsp of turmeric powder, 1 tbsp of sugar, and salt to taste.
Add 2 tbsp of lemon juice, 1 tsp of green chili paste, and 200ml of water to the dry ingredients. Mix well to form a smooth batter.
Just before steaming, add 1 tsp of baking soda to the batter and mix gently.
Grease a steaming tray with a little oil and pour the batter into it.
Steam the batter in a steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
Once cooked, let it cool slightly and then cut into squares.
For the tempering, heat 1 tbsp of oil in a small pan. Add 1 tsp of mustard seeds and let them splutter.
Add 10 curry leaves to the pan and sauté for a few seconds.
Pour the tempering over the steamed dhokla.
Serve the Khaman Dhokla warm with chutney or sauce of your choice.
