1Preheat your oven to 350°F (175°C).
In a medium saucepan, melt the unsalted butter over low heat.
Once melted, remove the saucepan from heat and stir in the honey and vanilla extract until well combined.
In a mixing bowl, combine the almond flour and salt.
Pour the butter mixture into the almond flour mixture and stir until a dough forms.
Press the dough evenly into the bottom and up the sides of tartlet pans.
Place the tartlet pans on a baking sheet and bake in the preheated oven for 10 minutes.
Remove the tartlets from the oven and evenly distribute the cranberries over the partially baked crusts.
Return the tartlets to the oven and bake for an additional 10-15 minutes, or until the crust is golden brown and the cranberries are soft.
Allow the tartlets to cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
Serve the tartlets warm or at room temperature.
