1Preheat your oven to 180°C (350°F).
Peel, core, and dice the apples into small cubes. Place them in a mixing bowl.
Add the ground cinnamon and 1 tablespoon of honey to the apples. Mix well to coat evenly.
In a separate bowl, combine the chopped pistachios, chopped walnuts, and shredded phyllo dough.
Melt the unsalted butter and pour it over the nut and phyllo mixture. Add the remaining 2 tablespoons of honey and mix until everything is well coated.
Lightly grease a baking dish. Spread the apple mixture evenly on the bottom.
Sprinkle the nut and phyllo mixture evenly over the apples to form the crumble topping.
Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the apples are tender.
Remove from the oven and let cool for a few minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
