1Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly and pat them dry.
Pierce each potato several times with a fork.
Place the potatoes on a baking sheet and bake for about 45 minutes, or until they are tender.
Remove the potatoes from the oven and let them cool slightly.
Cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer of potato inside the skin.
Brush the potato skins with olive oil and sprinkle with chili powder, salt, and pepper.
Return the potato skins to the oven and bake for an additional 10 minutes, or until they are crispy.
Remove from the oven and sprinkle shredded cheddar cheese over each potato skin.
Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Serve the potato skins hot, topped with a dollop of sour cream.
