Preheat your oven to 400°F (200°C).
Wash the potatoes and pierce them with a fork. Bake in the preheated oven for about 1 hour, or until tender.
While the potatoes are baking, cook the sausage in a skillet over medium heat until browned and crumbled. Drain any excess fat and set aside.
Once the potatoes are done, let them cool slightly, then cut them in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.

Chop the green onions and sprinkle them over the baked potato skins.
Serve the cheesy potato skins with sausage hot, with a dollop of sour cream if desired.
