Wash the fresh spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain the green color.

Blend the blanched spinach into a smooth puree and set aside.

Heat the vegetable oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
