In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined.
Press the mixture into the bottom of a 9-inch springform pan to form the crust. Set aside.
In a large mixing bowl, beat the cream cheese and 1 cup granulated sugar until smooth and creamy.
Add the sour cream and mix until well combined.
Add the eggs one at a time, beating well after each addition.
Add the cocoa powder, vanilla extract, and red food coloring. Mix until the batter is evenly colored and smooth.
Pour the batter over the prepared crust in the springform pan.
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed.
Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, before serving.
