African Spiced Sweet Potato Mascarpone Tart

- mascarpone cheese200 g
- puff pastry1 sheet (approx. 250g)
- ground nutmeg1 tsp
- ground ginger1 tsp
- honey2 tbsp

Preheat your oven to 200°C (392°F).

Peel and cut the sweet potatoes into cubes. Boil them in salted water for about 15 minutes, or until tender. Drain and let cool slightly.

Mash the sweet potatoes in a large bowl until smooth.

Add the mascarpone cheese, ground nutmeg, ground ginger, honey, and egg to the mashed sweet potatoes. Mix until well combined and creamy.

Roll out the puff pastry sheet on a baking tray lined with parchment paper. Gently score a 2cm border around the edge of the pastry, being careful not to cut all the way through.
