Slice the chicken breast into thin strips.
In a bowl, mix the chicken strips with 2 tablespoons of soy sauce. Let it marinate for at least 15 minutes.
While the chicken is marinating, slice the red bell pepper, green bell pepper, and onion into thin strips.
Mince the garlic and grate the ginger.
Cut the broccoli into small florets and slice the carrots thinly.
Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat.
Add the marinated chicken to the pan and stir-fry until it is cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
Add the sliced onion, red bell pepper, green bell pepper, broccoli, and carrots to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
Return the cooked chicken to the pan and mix everything together. Stir-fry for another 2-3 minutes to combine the flavors.
Serve the chicken stir-fry hot over rice or noodles, if desired.
