Prepare the pommes allumettes: Peel the potatoes and cut them into thin matchstick-sized strips. Rinse them in cold water to remove excess starch, then dry thoroughly with a clean towel.

Heat the peanut oil in a deep fryer or large pot to 180°C (356°F). Fry the potato strips in batches until golden and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season immediately with herbes de Provence and salt to taste.

Shape the ground beef into 4 equal burger patties. Season both sides with salt and pepper.
