Oreo Cheesecake Bites

   Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

   Place one Oreo cookie at the bottom of each liner.

   In a mixing bowl, beat the cream cheese until smooth.

   Add the sugar and vanilla extract to the cream cheese and mix until well combined.

   Add the egg and mix just until incorporated.

   Spoon the cream cheese mixture over each Oreo cookie, filling each liner about 3/4 full.

   Bake in the preheated oven for 15-18 minutes, or until the cheesecake is set.

   Allow the cheesecake bites to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
