In a mixing bowl, combine 1 cup of semolina (rava) and 1 cup of bajra flour.
Add
5 cup of yogurt and
5 cup of water to the dry ingredients and mix well to form a smooth batter. Let it rest for 15-20 minutes.
After resting, add salt to taste and mix the batter again.
Heat a non-stick pan or griddle over medium heat and add a little oil for cooking.
Pour a ladleful of batter onto the pan and spread it gently to form a thick pancake.
Sprinkle chopped onions, chopped tomatoes, chopped coriander leaves, finely chopped green chilies, and cumin seeds evenly over the uttapam.
Drizzle a little oil around the edges and cook until the bottom is golden brown.
Flip the uttapam and cook the other side until it is cooked through and golden.
Remove from the pan and repeat with the remaining batter.
Serve hot with chutney or sambar.
