Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon.
Finely chop the small onion.
In the same skillet, melt the butter and sauté the chopped onion until translucent.
In a bowl, mix the crumbled bacon, sautéed onion, shredded cheese, and pepper.
Take the slices of bread and make a pocket in each slice by cutting a slit on one side.
Stuff each bread pocket with the bacon and cheese mixture.
Place the stuffed bread slices on a baking sheet and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and the bread is golden brown.
Remove from the oven and let cool slightly before serving.
