Add the diced onions and bell peppers to the skillet. Cook for 3-4 minutes until they are softened.
Stir in the can of Rotel tomatoes and taco seasoning. Mix well to combine.
Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
Sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover and let it cook for an additional 2-3 minutes, or until the cheese is melted.
Serve the Rotel Taco Skillet hot, garnished with your favorite toppings if desired.
