In another medium bowl, beat the softened cream cheese and 1/4 cup granulated sugar until smooth and creamy. Add 1 large egg and 1/2 teaspoon vanilla extract, and beat until well combined.
Pour the cream cheese mixture over the red velvet batter in the baking pan, spreading it out evenly.
Use a knife or toothpick to gently swirl the cream cheese mixture into the red velvet batter to create a marbled effect.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cheesecake bars to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours before cutting into bars.
Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve. Enjoy!
