Pat the 600g white fish fillets dry with paper towels and set aside.
Peel and thinly slice the 2 medium onions (300g).
Peel and finely mince the 3 cloves of garlic (9g).
Zest and juice the lemon (60g), keeping zest and juice separate.
Heat 2 tablespoons (30ml) olive oil in a large skillet over medium heat.
Add the sliced onions and cook, stirring occasionally, for 10-12 minutes until golden and caramelized.
Add the minced garlic to the onions and sauté for 1 minute until fragrant.
Push the onions and garlic to the sides of the skillet. Place the fish fillets in the center.
Season the fish with 1 teaspoon salt (6g), 1/2 teaspoon black pepper (1g), and 1/2 teaspoon paprika (1g).
Sprinkle the lemon zest over the fish and pour the lemon juice evenly over the fillets.
Cover the skillet and cook for 6-8 minutes, or until the fish is opaque and flakes easily with a fork.
Serve the fish topped with the caramelized onions and pan juices. Enjoy!
