Pour a small amount of batter into the skillet to form a pancake. Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.
Flip the pancake and cook for another 2-3 minutes, until golden brown and cooked through.
Repeat with the remaining batter, adding more olive oil to the skillet as needed.
Serve the cheese and egg pancakes warm, optionally with a side of fresh vegetables or a dollop of sour cream.
