1Rinse the lentils under cold water and set aside.
In a large pot, heat the olive oil over medium heat.
Add the chopped onion, minced garlic, chopped carrot, and chopped celery. Sauté until the vegetables are softened, about 5-7 minutes.
Add the lentils, vegetable broth, bay leaf, and dried oregano to the pot. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30-35 minutes, or until the lentils are tender.
Remove the bay leaf and discard it.
Stir in the chopped fresh parsley and dill. Season with salt and pepper to taste.
Serve the soup hot, garnished with additional fresh herbs if desired.
