Ingredients

4 Servings
  • basmati rice (uncooked)1 cup (200g) g
  • jaggery0.75 cup (120g) g
  • ghee2 tablespoons (28g) g
  • cashews0.25 cup (30g) g
  • raisins0.25 cup (40g) g
  • cardamom powder0.5 teaspoon teaspoon
  • water2 cups cup

Instructions

  1. 1

Rinse the basmati rice thoroughly in water 2-3 times, then soak it in water for 20 minutes. Drain and set aside.

  2. 2

In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat. Add the cashews and fry until golden brown. Remove and set aside. In the same ghee, add the raisins and fry until they puff up. Remove and set aside with the cashews.

  3. 3

In the same pan, add the soaked and drained rice. Sauté gently for 1-2 minutes until the rice is well coated with ghee.

  4. 4

Add 2 cups of water to the rice. Bring to a boil, then reduce the heat to low, cover, and cook until the rice is tender and all the water is absorbed (about 12-15 minutes).

  5. 5

While the rice is cooking, dissolve the jaggery in 1/4 cup of warm water in a separate bowl. Strain to remove any impurities.

  6. 6

Once the rice is cooked, gently fluff it with a fork. Pour the strained jaggery syrup over the rice and mix gently.

  7. 7

Add the fried cashews, raisins, and cardamom powder to the rice. Mix carefully to combine all ingredients without breaking the rice grains.

  8. 8

Cover and cook on very low heat for 5-7 minutes, allowing the flavors to meld and the jaggery to be absorbed.

  9. 9

Turn off the heat and let the Gud Rice rest for 5 minutes before serving. Serve warm and enjoy!
