Gud Rice (Jaggery Rice)

Rinse the basmati rice thoroughly in water until the water runs clear. Soak the rice in water for 20 minutes, then drain.

In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat. Add the cashews and fry until golden brown. Remove and set aside. Add the raisins and fry until they puff up. Remove and set aside with the cashews.

In the same pan, add the soaked and drained rice. Gently sauté the rice in the remaining ghee for 2-3 minutes.

Add 2 cups of water to the rice. Bring to a boil, then reduce the heat to low. Cover and cook until the rice is tender and all the water is absorbed (about 12-15 minutes).

While the rice is cooking, dissolve the jaggery in 1/4 cup of warm water in a separate bowl. Strain to remove any impurities.

Once the rice is cooked, gently fluff it with a fork. Pour the strained jaggery syrup over the rice and mix gently.

Add the fried cashews, raisins, and cardamom powder to the rice. Mix well, cover, and cook on low heat for another 5-7 minutes, allowing the flavors to blend and the jaggery to be absorbed.
