Place a spoonful of the spiced potato mixture onto each bread slice. Roll up the bread tightly to enclose the filling. Press the edges to seal.
Heat a non-stick skillet over medium heat. Lightly grease if desired. Place the bread rolls seam-side down and toast, turning occasionally, until all sides are golden and crisp.
