Preheat your oven to 180°C (350°F).
In a large bowl, combine 600g ground beef, 1 egg, 60g breadcrumbs, 2 tbsp jerk seasoning, and 2 cloves minced garlic. Mix until well combined.
Shape the mixture into a loaf and place it in a lined or greased loaf pan.
Bake the meatloaf in the preheated oven for 45-50 minutes, or until cooked through and the internal temperature reaches 70°C (160°F).
While the meatloaf is baking, peel and chop 500g sweet potatoes. Place them in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.
Drain the sweet potatoes and return them to the pot. Add 1 tbsp coconut oil and mash until smooth. Season with salt to taste.
In a skillet, heat 1 tbsp coconut oil over medium heat. Add 200g peas and sauté for 2-3 minutes.
Pour in 100ml coconut milk and cook for another 2-3 minutes until the peas are heated through and the coconut milk is slightly reduced.
Stir in 2 tbsp chopped scallions and remove from heat.
Slice the meatloaf and serve with the sweet potato mash and coconut peas on the side. Enjoy your Caribbean-Style Beef Meatloaf!
