Spinach Dal Chawal
Ingredients

Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 20 minutes.

In a pot, add the split green gram and enough water to cover it. Bring to a boil, then reduce the heat and let it simmer until the gram is tender.

While the gram is cooking, finely chop the onion, garlic, and ginger. Wash and roughly chop the spinach.

In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped onion, garlic, and ginger to the pan. Sauté until the onion becomes translucent.

Stir in the turmeric powder and red chili powder, and cook for another minute.

Add the chopped spinach to the pan and cook until it wilts.

Once the gram is cooked, add it to the pan along with any remaining cooking water. Stir well to combine.

Drain the soaked rice and add it to the pot with the spinach and gram mixture. Add enough water to cook the rice (about 400ml), and season with salt to taste.

Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer until the rice is cooked and the water is absorbed.
