Cut the paneer into small cubes and set aside.
Finely slice the onion, dice the carrot, and chop the bell pepper.
Heat 1 tablespoon of ghee in a large pan or wok over medium heat. Add the paneer cubes and fry until golden on all sides. Remove and set aside.

Cook for another 2-3 minutes, stirring occasionally, until everything is heated through.
Turn off the heat and garnish with chopped coriander leaves.
