1In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15-20 minutes.
Boil or steam the mixed vegetables until they are tender. Mash them lightly.
Finely chop the onion and green chili.
In a pan, heat the oil and add cumin seeds. Once they splutter, add the chopped onion and green chili. Sauté until the onion turns translucent.
Add the mashed vegetables to the pan and mix well. Cook for a few minutes until the mixture is dry. Let it cool.
Divide the dough into equal portions and roll each portion into a small ball.
Flatten a dough ball and place a spoonful of the vegetable mixture in the center. Bring the edges together to seal the filling.
Roll the stuffed dough ball gently into a flat disc, ensuring the filling does not spill out.
Heat a skillet or tawa over medium heat. Cook the paratha on both sides, applying a little oil, until golden brown spots appear.
Serve hot with yogurt or pickle.
