1Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper.
Peel and boil the potatoes until tender, then mash them in a large bowl.
Finely chop the onion and sauté it in olive oil over medium heat until translucent, about 3-4 minutes.
Add the sautéed onion, salt, and black pepper to the mashed potatoes. Mix well.
Stir in the mayonnaise until the mixture is creamy and well combined.
In a separate bowl, sift the all-purpose flour. Gradually add water (about 60-80 ml) to form a soft, pliable dough.
Divide the dough into small balls and roll each into a thin circle (about 3-4 mm thick).
Place a spoonful of the potato-onion-mayo filling in the center of each circle.
Fold the dough over the filling to form a half-moon shape and seal the edges by pressing with a fork.
Arrange the puffs on the prepared baking tray and brush the tops lightly with olive oil.
Bake in the preheated oven for 18-22 minutes, or until the puffs are golden brown and crisp.
Remove from the oven, let cool slightly, and serve warm.
