Preheat your oven to 180°C (350°F).

In a large bowl, crack the 6 large eggs and whisk them until well combined. Add the salt and black pepper, and whisk again.

Heat 2 tbsp of olive oil in an oven-safe non-stick skillet over medium heat.

Add the diced red bell pepper and sliced green chillies to the skillet. Sauté for 3-4 minutes until softened.

Add the baby spinach to the skillet and cook for 1-2 minutes until wilted.

Pour the whisked eggs evenly over the vegetables in the skillet. Gently stir to distribute the vegetables evenly.

Sprinkle the crumbled low-fat feta cheese evenly over the top of the egg mixture.
