Ingredients

Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain the green color.

Blend the blanched spinach into a smooth puree and set aside.

Heat the vegetable oil in a large pan over medium heat. Add the finely chopped onion and sauté until golden brown.

Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another 2 minutes.

Add the ground cumin, ground coriander, ground turmeric, and garam masala. Cook for 1-2 minutes until the spices are fragrant.
