1Soak the dried chickpeas in water overnight or for at least 12 hours.
Drain and rinse the chickpeas thoroughly.
In a food processor, combine the chickpeas, chopped onion, minced garlic, fresh parsley, fresh cilantro, ground cumin, ground coriander, and salt. Process until the mixture is coarse and grainy.
Add the baking powder and flour to the mixture and process again until well combined. The mixture should hold together when pressed.
Form the mixture into small balls or patties.
Heat oil in a deep pan over medium heat. Fry the falafel balls or patties until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Warm the whole wheat tortillas in a dry skillet or microwave.
To assemble the wraps, place a few falafel balls or patties in the center of each tortilla.
Top with shredded lettuce, diced tomatoes, and a drizzle of tzatziki sauce.
Fold the sides of the tortilla over the filling and roll up to form a wrap.
