1In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.
Preheat your grill or a grill pan over medium-high heat.
Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
While the salmon is cooking, pour the remaining marinade into a small saucepan and bring it to a boil. Reduce the heat and let it simmer for a few minutes until it thickens slightly.
Once the salmon is done, transfer it to a serving plate and drizzle the thickened marinade over the top.
Serve the salmon teriyaki with your choice of side dishes, such as steamed rice and vegetables.
