Rinse the long grain rice under cold water until the water runs clear.
In a medium saucepan, add the rice and 400ml of water. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
While the rice is cooking, finely chop the garlic cloves.

Once the rice is cooked, add it to the skillet with the spinach and crab mixture.
Season the mixture with cumin and Cajun seasoning, stirring well to combine.
Squeeze the juice of one lime over the rice mixture and stir again.
Serve the imitation crab and spinach rice hot, garnished with lime wedges if desired.
