In a large bowl, combine the angus beef, ground beef brisket, and minced spicy Italian sausage. Add the hamburger seasoning, garlic powder, and liquid smoke. Mix gently until just combined.

Divide the meat mixture into 8 equal portions and shape each into a loose ball.

Heat a large skillet or griddle over medium-high heat. Once hot, add the bacon slices and cook until crispy. Remove and set aside on paper towels.

Increase the heat to high. Place the meat balls onto the hot skillet and immediately smash each ball flat with a spatula to form thin patties. Cook for 2-3 minutes until the edges are crispy.

Flip each patty, top with a slice of yellow American cheese, and cook for another 1-2 minutes until the cheese is melted and the patties are cooked through.

While the patties cook, slice the mini sesame seed buns and toast them lightly on the skillet or in a toaster.

Prepare the toppings: thinly slice the beefstock tomatoes, shred the iceberg lettuce, and finely slice the yellow onions.

To assemble, spread 1/2 tbsp of truff sauce aioli on the bottom half of each bun. Layer with shredded lettuce, a slice of tomato, a few onion slices, a smash patty with melted cheese, and a slice of crispy bacon. Top with the other half of the bun.
