Wash the potatoes thoroughly and pierce them several times with a fork.
Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, heat the olive oil in a pan over medium heat.
Add the chopped onions and minced garlic to the pan and sauté until the onions are translucent and slightly caramelized, about 10 minutes.
Once the potatoes are done, remove them from the oven and let them cool slightly.
Cut each potato in half lengthwise and scoop out the insides, leaving a small border of potato around the skin.
In a bowl, mix the scooped-out potato with the sautéed onions and garlic, shredded cheese, salt, and pepper.
Spoon the mixture back into the potato skins, mounding it slightly.
Place the stuffed potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before serving.
