Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly and pierce them with a fork several times.
Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, heat a skillet over medium heat and add the diced onion. Cook until the onion is translucent, about 5-7 minutes.
In a large bowl, combine the cooked chicken, shredded cheese, cooked onion, and tomato sauce. Mix well.
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving a small border of potato around the skin.
Add the scooped-out potato to the chicken and cheese mixture and mix until well combined.
Spoon the mixture back into the potato skins, mounding it slightly.
Place the stuffed potatoes back on the baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the tops are golden and the filling is heated through.
Remove from the oven and let cool for a few minutes before serving. Enjoy your Chicken and Cheese Stuffed Potatoes!
