Rinse the toor dal thoroughly under running water and soak it for about 30 minutes.

In a pressure cooker, add the soaked toor dal and 500 ml of water. Cook for 3-4 whistles or until the dal is soft and mushy.

While the dal is cooking, peel and chop the carrot and potato into small cubes. Chop the tomato and onion as well.

In a large pot, heat the vegetable oil over medium heat. Add the mustard seeds and let them splutter.

Add the cumin seeds, dried red chilies, and curry leaves. Sauté for a few seconds until fragrant.

Add the chopped carrot, potato, and tomato. Sauté for a few minutes.

Add the cooked toor dal along with its water to the pot. Stir well.
