1Rinse and soak the mixed dal (lentils) for at least 30 minutes if not already soaked. Drain and set aside.
Finely chop the onion, tomatoes, green chilies, garlic, and ginger.
Heat the vegetable oil in a large pan or pressure cooker over medium heat.
Add cumin seeds and let them splutter for a few seconds.
Add chopped onions and sauté until golden brown.
Add chopped garlic, ginger, and green chilies. Sauté for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they turn soft and oil starts to separate.
Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
Add the soaked mixed dal and stir to combine with the masala.
Pour in 400ml water and mix well. If using a pressure cooker, close the lid and cook for 3-4 whistles. If using a pan, cover and simmer for 25-30 minutes or until the dal is soft.
Once cooked, open the lid and add garam masala. Stir well and simmer for 2 more minutes.
Garnish with chopped cilantro and serve hot with rice or roti.
