1Peel and thinly slice the onions.
In a large pot, melt the butter with the olive oil over medium heat.
Add the sliced onions and sugar, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.
Add the beef broth, and bring the mixture to a simmer. Season with salt and pepper to taste.
Preheat your oven's broiler.
Ladle the soup into oven-safe bowls, and place a slice of French bread on top of each.
Sprinkle the grated Gruyère cheese over the bread.
Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
Carefully remove from the oven and serve hot.
