Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to cold water to retain the green color.
Blend the blanched spinach into a smooth puree and set aside.
Heat oil in a pan over medium heat. Add chopped onion and sauté until golden brown.
Add ginger-garlic paste and sauté for another minute until the raw smell disappears.

Add salt to taste and mix well.
Cut the paneer into cubes and add to the spinach mixture. Gently stir to coat the paneer with the spinach sauce.
Cook for another 3-4 minutes, allowing the paneer to absorb the flavors.
Garnish with fresh cream before serving.
Serve hot with naan, roti, or rice.
