In a large mixing bowl, combine 2 cups wheat flour,
5 cup rice flour,
5 teaspoon salt, and mix well.
Add the grated tomatoes, finely chopped green chili peppers, and chopped cilantro to the flour mixture.
Pour in 1 tablespoon olive oil and mix to incorporate.
Gradually add
5 cup water, mixing as you go, until a soft, pliable dough forms. You may need a little more or less water depending on the juiciness of the tomatoes.
Knead the dough for 3-4 minutes until smooth. Cover and let it rest for 10 minutes.
Divide the dough into 8 equal portions and roll each into a ball.
On a lightly floured surface, roll each ball into a flatbread about 1/4 inch thick.
Heat a skillet or tawa over medium heat. Place a flatbread on the hot skillet and cook for 1-2 minutes until bubbles appear.
Flip and cook the other side for another 1-2 minutes, pressing gently with a spatula. Drizzle a few drops of olive oil if desired.
Repeat with the remaining dough balls.
Serve the Tomato & Green Chili Wheat Flatbreads warm with your favorite dip or curry.
