In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined.
Add the vanilla extract and mix well.
Add the eggs one at a time, beating well after each addition.
Stir in the sour cream until the mixture is smooth and creamy.
Pour the cream cheese mixture over the crust in the springform pan.
Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.
Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
Before serving, top the cheesecake with fresh strawberries. Slice and enjoy!
