Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring occasionally until smooth.
In a mixing bowl, combine the cream cheese, sugar, vanilla extract, cocoa powder, and red food coloring. Mix until smooth and well combined.
Add the melted chocolate to the cream cheese mixture and stir until fully incorporated.
Line a square baking dish with parchment paper. Spread half of the baked kataifi pastry evenly on the bottom.
Pour the chocolate and cream cheese mixture over the kataifi layer, spreading it evenly.
Top with the remaining kataifi pastry, pressing gently to adhere.
Refrigerate the dish for at least 2 hours or until set.
